Tandolly-brand preserved eggs are made from hen’s eggs, and have a transformed egg-white surface lustrous as amber and richly translucent, with a character that is pliant featuring marked elasticity, and with an egg yolk with an exterior that is congealed and slippery tender and with a center that is like paste or firm, either blackish-green or yellowish-green; the whole is a chewy delight. |
